Owner/Executive Chef
Matthew Hisiger
Matthew Hisiger began his career at Panama Hatties in 1992.
A self taught Chef/Restaurateur, Matthew graduated from S.U.N.Y
Oneonta in 1989 with a degree in Business. It was during those
college years that he developed his passion for the restaurant
business. In 1991, Matthew returned to Long Island and was
employed at The Left Bank Cafe in Island Park. In late 1991, he
was hired by
Michaels-A-Bistro in

Roslyn. It was there that he
learned the intensity of a three star restaurant. In May of
1992 Matthew joined Panama Hatties as sous-chef. The restaurant
received excellent ratings from The New York Times and Newsday
in November 1992. In 1997, after the departure of Chef Blake
Verity, Matthew was promoted to Executive Chef. In 1998 and
1999, Panama Hatties was awarded four stars by both The New York
Times and Newsday. In February 2003, Matthew purchased Panama
Hatties from Richard and Stacy Gertz. He looks forward to the
challenge of maintaining Panama Hatties' reputation as Long
Island's premier restaurant. |
